Nosy Be's Big Blue Grilled Carangue

Dans la cuisine du Grand Bleu, le Chef réalise une marinade préalable pour tous les poissons grillés. Les parfums de la marinade sentent bon l’île et l’exotisme de Nosy Be : citron vert, de l’ail, un peu de thym, du piment et des “oignons verts”, c’est le petit plus facultatif. Aujourd’hui, le Chef de cuisine vous dévoile sa recette artisanale du mois : la Carangue grillée façon Grand Bleu de Nosy Be.

For the fish marinade:

A beautiful 2 kg trevally ideally caught in Nosy Be
1 citron vert – 1 piment – 2 échalotes
4 to 6 green scallions (or spring onions)
2 cloves garlic, crushed – a few sprigs of flat-leaf parsley
4 sprigs of thyme – 100 grams of butter
Salt, ground and crushed black pepper from Madagascar
2 tbsp flour

Once all these ingredients are gathered, you can put on your apron.

Pour 4 à 6 personnes – Temps de préparation : 20 min – Temps de repos : 1H à 1 nuit

Clean and empty the fresh trevally. Make two cuts on each side
Put in a large dish and pour over the marinade including the squeezed lemon.
Mix well, cover with cling film and keep in the fridge for 1 hour or ideally overnight.
When ready to grill, wipe it dry with paper towels and discard the marinade.
Flour it and grill on the barbecue or on a fat-free grill.

On accompagne la carangue grillée d’une “sauce relevée”, montée au beurre doux à base d’échalotes, oignons verts, piment, ail, citron et du persil plat.

Crush the garlic, mince the chilli and mix in a bowl with the green onions and parsley.
Add salt, pepper and lemon juice.
Add to a frying pan with the melted butter. Adjust the seasoning and pour over the fish on the plate.

Present on the plate with local vegetables: chouchoutes, carrots, potatoes, to perfect with yams, cassava, sweet potatoes and a small bowl of white rice.
