Stuffed crabs of Nosy Be
The kitchen team accompanied by its Chef reveals with delight its artisanal recipe of the month including the idealized ingredients for this remarkable execution of stuffed crabs from Nosy Be.
Ingredients for 2 people
2 mangrove crabs
2 carrots, 1 lime
1 sprig of thyme, 3 sprigs of parsley and 1 onion
5 green scallions (or chives)
2 shallots, 2 cloves of garlic
1 small bunch of angel hair
2 tablespoons olive oil
1 pinch of salt and pepper
2 pinches of breadcrumbs
1 small glass of old Dzama de Nosy Be rum (optional)
Once all these ingredients are gathered, you can put on your apron.
Brush thoroughly and rinse the crabs.
Cook them for 15 minutes at a low boil with the 2 carrots cut into sections, parsley, thyme and onion.
Shell and set the flesh aside.
Put the angel hair in a pot of boiling water, cook it and take it out. Cut them small.
To prepare the stuffing: finely chop the chives, shallots, garlic, chilli.
Add the lump crab meat and cook for 2 minutes.
Add angel hair, lemon juice and rum. Season with salt and pepper and mix well.
Preheat the oven to 240°C.
Garnish the hollowed and cleaned shells of the crabs with the stuffing, sprinkle with breadcrumbs and bake for about ten minutes.
