Fish burger revisited by the Big Blue
This fish burger from Nosy-Be. It is part of street-food and also comes in ham, eggs, cheese, poultry livers, flying pepper, tuna and marlin.

The bread of the burger

Ingredients for 1 pers.
For the burger
1 burger bun
1 slice of tomato
2 green salad leaves
1 tablespoon spicy tomato sauce
20 g cheddar cheese
1 fish fillet
1 tablespoon deodorized coconut oil
For breading
1 tablespoon gluten
1 whole egg beaten
1 pinch of fine salt
1 pinch pepper
1 tablespoon almond powder
The step-by-step recipe
Step 1
Dip the fish fillet double-sided successively in the gluten and then the beaten egg. Then finally the mixture for the breading: almond powder, parmesan, pepper, salt and pinch of garlic.
Step 2
Put the breaded fish fillet in a pan with deodorized coconut oil to cook double-sided.
Step 3
When the breaded fish is golden brown on one side, turn it over and add the cheddar cheese (here grated) to melt it.
Step 4
Cut the burger bun in half, place a slice of tomato on the bottom.
Step 5
Then place in order: two salad leaves, breaded fish and melted cheese.
Step 6
Spread the top with spicy tomato sauce (here a Creole sauce)

Put the bun's hat on the sandwich and enjoy this fish burger when it's hot.
