Nosy Be's Big Blue Grilled Carangue
In the kitchen of Le Grand Bleu, the Chef makes a marinade beforehand for all grilled fish. The aromas of the marinade smell of the island and the exoticism of Nosy Be: lime, garlic, a little thyme, chilli and “green onions”, that's the optional little extra. Today, the Chef de cuisine reveals his artisanal recipe of the month: the Grand Bleu de Nosy Be grilled trevally.
Guests can enjoy half-board, full-board or all-inclusive options, depending on the season and arrival; Because the establishment works exclusively with fresh products, a guarantee of gourmet flavor.
For the fish marinade:
A beautiful 2 kg trevally ideally caught in Nosy Be
1 lime – 1 chilli pepper – 2 shallots
4 to 6 green scallions (or spring onions)
2 cloves garlic, crushed – a few sprigs of flat-leaf parsley
4 sprigs of thyme – 100 grams of butter
Salt, ground and crushed black pepper from Madagascar
2 tbsp flour
Once all these ingredients are gathered, you can put on your apron.
For 4 to 6 people – Prep Time: 20 min – Resting time: 1 hour to 1 night
Clean and empty the fresh trevally. Make two cuts on each side
Put in a large dish and pour over the marinade including the squeezed lemon.
Mix well, cover with cling film and keep in the fridge for 1 hour or ideally overnight.
When ready to grill, wipe it dry with paper towels and discard the marinade.
Flour it and grill on the barbecue or on a fat-free grill.
The grilled jack is accompanied by a “spicy sauce”, whipped in unsalted butter made with shallots, green onions, chilli, garlic, lemon and flat-leaf parsley.
Crush the garlic, mince the chilli and mix in a bowl with the green onions and parsley.
Add salt, pepper and lemon juice.
Add to a frying pan with the melted butter. Adjust the seasoning and pour over the fish on the plate.
Present on the plate with local vegetables: chouchoutes, carrots, potatoes, to perfect with yams, cassava, sweet potatoes and a small bowl of white rice.
