Preparation:

  • Cut the meats into medium-sized pieces.
  • Slice the onion.
  • Peel and chop the garlic cloves and ginger.
  • Dice the tomatoes.
  • Wash and cut the bredes.
  • Cooking meats:
  • In a large pot, heat a little oil.
  • Fry the zebu pieces until golden brown.
      • Add the zebu and chicken pieces, continue to sauté everything.
  • Adding vegetables:
  • Stir in the minced onion and fry until translucent.
  • Add the chopped garlic and ginger, sauté for a few minutes until the aromas develop.
  • Add the diced tomatoes, simmer until they start to melt.
  • Simmer:
  • Add a liter of water to the pot and bring to a boil.
  • Reduce the heat and simmer for about an hour, until the meats are tender.
  • Addition of the bredes:
  • Add the bredes and green chiles (if you'd like a little spice) to the pot.
  • Cook for another 10 to 15 minutes, until the bredes are tender.
  • Seasoning:
  • Season with salt and pepper to taste.
